Wallace says he has been proud of his pizza business for the past 11 years. We asked, "Were you surprised you had the most number of critical violations this week?" Wallace replied, "Well, yes, the most number. Every restaurant is going to have something."
Napoli's Pizza Cuisine had 13 critical violations including clean equipment stored on the floor, the ladies room didn't have hand towels, an expired license and no proof of employee training. You can see that full report by

We asked Wallace if he has fixed all the problems. He says, "We've tried. Some things are difficult."
Specifically Wallace says moving un-used equipment out of his store has been a challenge because he wants to sell it but just doesn't have the time. He let us look in the kitchen where we found a can of grease on the floor. Wallace told us, "That's grease that drips from the hood, I clean that up on a constant basis." There were no paper towels at the employee handwash sink, we also found a cutting knife in the trash can. Wallace says, "I don't know why it's in there... it may have fallen off."
Wallace admits he's got some work to do around his kitchen but he says his good food and service is why he's still in business after more than a decade. He wants his customers to know this, "I'm glad to have all the customers!"
