Science behind the brew

JACKSONVILLE, Fla. — Craft breweries are becoming a booming local industry, and a UNF professor thinks he's tapped into something new in the brewing process.

Dr. Michael Lentz is studying and isolating strains of yeast that make wine go bad, but give beer a fizzy effect.

“We are exploring unconventional yeast to possible source of making new sources of beer,” said Lentz. “A lot of people are trying it but not a lot of people have the resources and equipment available to really do the characterization we are trying to do.”

The associate biology professor isn't keeping his recipes secret. He is sharing his ideas with Green Room Brewery, a brewery in Jacksonville Beach.
